Chicken Parmesan Lasagna Soup

If you like trying something new, here is a soup recipe that you will love. Here is how you can make it:


Ingredients:

  • 48 oz chicken broth

  • 1 cup of regular milk or condensed milk

  • 1 pack Italian seasoning

  • 1/2 medium yellow onion chopped

  • 2 tablespoons minced garlic

  • 3 tablespoons butter

  • 1 cup of chopped spinach (fresh or frozen)

  • 8-10 lasagna noodles (break into 1-2 inch pieces)

  • 3 chicken breast (cut into1/2 inch cubes)

  • 1-2 tablespoons of oil (for cooking the chicken)

  • 1 cup shredded Parmesan cheese

  • Salt & pepper to taste

  • Saltine crackers (optional)

  • Additional 1/2 - 1 cup of Parmesan cheese for garnish (optional)


Directions:

  1. Sauté onion, garlic, and Italian seasoning with butter in a medium sized pot till golden brown.

  2. Add chicken broth, milk, noodles, spinach, salt, and pepper and let cook over medium heat for 20-25 minutes or until noodles are tender.

  3. Meanwhile, cook chicken breast in an oiled pan until cooked all the way through. Then add the chicken to the soup.

  4. Add 1 cup of Parmesan cheese during the last few minutes of cooking, allowing time for the cheese to melt.

  5. Add saltine crackers and additional cheese as a garnish - optional.

  6. Serve and enjoy!
